Chicken and Bar-b-que Lasagne - for 4 people

If you want to produce an impressive dish with minimum fuss, then this is it. It looks and tastes fabulous and is reasonably simple to prepare. Personally, I love it as it is such a unique dish but pleases every time

Ingredients-
Chicken (off the bone) 600 grams
Tomato sauce 1 bottle (250grams)
Brown sauce 1 bottle (250grams)
Tomato puree 50 grams
Garlic 1 clove
Lasagne sheets approx 20
White sauce (see my other recipe) 2 pints
  1. Dice up the chicken into small chunks
  2. Roughly chop the garlic
  3. Sauté the garlic of in a little olive oil until soft
  4. Add chicken and cook until firm
  5. Add the tomato & brown sauce
  6. Leave to simmer for around 15 minutes (this will flavour the meat really well)
  7. Add the tomato puree. Don’t be concerned if the sauce looks slightly thin the lasagne sheets will absorb a lot of moisture
  8. Layer a lasagne dish with a thin layer of white sauce followed by lasagne sheets, now place a layer of the bbq chicken mix followed by lasagne.
  9. Continue this routine until you are about ˝ cm of the top of the dish. Place another layer of lasagne followed by the final layer of white sauce.
  10. The dish will take approximately 1- 1 ˝ hours to cook at around 170 degrees
To add a bit more zing to the dish sprinkle some of your favourite grated cheese over the top prior to placing in the oven.
