A sweet dish, which is loved by both young and old. Here is a British favourite with a slight twist. I’ve taken the basic principle of bread and butter pudding and added a bit of fruit which I love. Although I’ve added fruit you can again change the fruit to any choice of yours or even remove it and add chocolate (if you can afford to take the extra calories!)

Bread and Butter Pudding with Strawberries

Ingredients
Half an unsliced white loaf
Butter for spreading
Brown sugar 200grams
1/2 pint milk
Raisins or sultanas (handful)
A pinch of cinnamon and nutmeg
1 egg
Strawberries 200grams (you can substitute this for any fruit you like; banana is quite popular)

An ovenproof dish/casserole dish

Preparation
Remove the crust from the bread and save for breadcrumbs in another dish

Cut the bread in half so you have triangles

Butter the slices all over on both sides. Also grease the dish with butter

Sprinkle over the fruit

Sprinkle some brown sugar over that and add a cover of more buttered bread, covering all the fruit.

Pierce the bread a few times and then slowly pour over the milk, letting it all soak into the bread before adding more. Sprinkle the cinnamon & nutmeg onto the bread. In a separate bowl thoroughly whisk the egg & milk together and slowly pour over the bread. Initially it won’t take all the mixture, so leave it to rest for 5-10 mins then add the rest of the mixture. Finally sprinkle the some more brown sugar over the top of the dish.

Execution Bake in a low oven, approx 140 c for a couple of hours until it rises up and the sugar caramelizes on top.

Serve hot with ice cream or custard
(Serves approx 3-4 people)
