During those cold winter nights it’s really quite hard to start trying to show off with fancy foods. So this recipe is one I like to think of as a cosy night in! Whilst being very tasty it’s also quite cheap to make and can be stored for a few days if you have any left over.
Irish Stew
Ingredients
1kg lamb
¾ kg potatoes
¼ kg onions, sliced
Good Pinch salt and pepper
10 fl stock (Beef or chicken)
Small Handful roughly cut thyme
Preparation
Remove the fat from the lamb as much as possible, and then cut the lamb into decent sized chunks.
Cut the onions & Potatoes into roughly the same sizes as the lamb.
Execution
Fry of the lamb & onions in a large saucepan with the seasoning. Once the lamb is browned of (no red bits of meat showing) add the stock, thyme & potatoes. Bring the dish to the boil and then reduce to a simmer for approximately 2 – 2 ½ hours
Serve in large soup bowl just as the rain starts hammering of the windows….
I really like to add a big dollop of brown sauce to my stew just as I start to eat it!
