Apple & Cider MeatballsHardly a
traditional Italian dish but one that perhaps they may come to love!
This recipe came about when I had very little in the fridges but
minced beef, apples and some cider vinegar. After experimentation I
swapped the cider vinegar for cider. The result was quite
tremendous; I really highly recommend this
dish.
Ingredients
500gm minced beef
1 cooking apple diced into ¼ pieces
500 ml tomato juice
6 slices of bread made into breadcrumbs
20 gm flour
1 egg
250ml cider (Strongbow is my choice)
Method
- Mix the beef, diced apple, breadcrumbs & egg. Make sure all ingredients are thoroughly mixed together. Shape the meatballs into the normal size for them and roll in flour
- In a hot frying pan, with a little oil in it, add the meatballs, you will need to constantly move the mixture around to stop them from burning.
- Once the meatballs are browned place in an oven dish.
- In the same pan add the tomato juice and allow getting just before boiling point, adding the cider and allowing to simmer for about 5 minutes. Once fully cooked pour over the meatballs, cover with tin foil, and place in a preheated oven (180 degrees Celsius)
- allow the meatballs to cook for 45 minutes then remove the tin foil and bake for a further 5 minutes.
- Serve with chunky chips & coleslaw.
My own personal tip
If you are a non drinker then replace the cider with apple juice.
