Pork Steak with Brie & Mango Topping

This dish not only looks great but tastes the same. It can be quickly prepared and served with minimal fuss. The Brie is just my own personal choice - you may of course substitute most other cheeses.

Ingredients
Pork steak x 4
Brie x 125gm
Mango x 1
Olive oil x touch
Salt & Pepper

Method
  1. Under a piece of cling film beat the pork steak out to about 50% of its original size. Drizzle a touch of olive oil over each steak. Sprinkle a touch of salt and pepper over both sides. Don’t add too much remember you can always add but never take away
  2. Peel the mango and remove the flesh from the stone. (Don’t worry about the shape of the flesh it’s going to get chopped up in a bit!) throw away both the stone and the skin
  3. chop the mango up into small but rough pieces
  4. Roughly chop up the brie into same size pieces. If the brie is melting don’t panic. Just leave it as it is.
  5. With a hot pan on the range seal of the pork steaks until lightly browned on each side then place in the oven for about 6 minutes or until cooked.
  6. In a small pan drizzle a little olive oil; allow to warm then add the mango. Allow the mango to warm for about a minute, now add the brie. At this point you must keep the mixture moving otherwise it is likely to catch and burn.
  7. Place your pork steaks on a warmed plate then spoon the brie and mango mixture over the top.
  8. Serve!


My own personal tip:
My recipes are written from ideas I get from work, in the pub or even out running. If you think the Brie would be nice with some other fruit - adjust the recipe accordingly! Remember a recipe is a guide - not an order!
